lemon chia almond bites
Ingredients
- 1 cup almonds (or 1 1/2 cups almond meal)
- 2 1/2 tablespoons coconut oil, melted
- 2 tablespoons maple syrup
- 1/4 organic lemon, zested
- 1 tablespoon chia seeds
- 1/4 tsp baking powder
- 1/4 tsp salt
Method
Preheat oven to 350F.
Add almonds to food processor/high speed blender and process until a fine meal forms.
Pour almond meal into a bowl and combine with the rest of the ingredients. You can adjust the amount of lemon zest depending on your taste. I also added a squeeze of lemon.
Use a tablespoon to scoop the dough and roll into balls. Place on a lined baking sheet and use a fork to gently press down the cookies.
Bake for about 12 – 15 minutes until the cookies have started to turn golden.

I love the sound of these - but don't chia seeds have to soak to truly release their nutritious value? I've always heard that if you don't soak them you can't digest the nutrition.

Good question! You can digest chia seeds whole (unlike flax seeds) so I think it should be ok! I do love soaking them as well :)

I question the amount of almond meal (or almonds) in the recipe; 1 cup of almonds would break down to less than a cup of meal if you did it that way, so why do you call for more than that if using ready made meal?

Hi Maryellen, I find that when I make my own almond meal from 1 cup of almonds it actually gets light and fluffy, creating about a cup and 1/2 of almond meal. If you pack the almond meal down it'll be less. If you're using store bought almond meal just give it a good stir before measuring to make sure its not packed down. Hope that helps!
